Production details

The Brasserie de l’Être works with neo-hop-growers who want to reinstate forgotten hops with specific gustative properties, but also with groups of organic farmers to create new organic malted-barley sector. The co-products are treated with partners as Ramen tes Drêches for the grains, Brewsticks and Les Alchimistes. The yeasts which are very proteinaceous are offered to beekeepers to feed the bees at the end of the winter. Each year, the brewery produces 1500 hectolitres of beer.

History

La Brasserie de l’Être especially works with barley malt, malted wheat, rye and other cereals produced in Ile-de-France, Picardie & Champagne (less than 150km from Paris) and prioritizing organic agriculture. The hops are coming from Alsace, North of France and Ile de France, also in organic agriculture or with the Nature & Progress label. The brewery does not sale general public but to resellers, alcohol boutiques or restaurants. By working with chefs and prestigious establishments, the team wish to end with the cliché beer-football-pizza.
